Ingredients for 4 people:

  • 2 whole eggs
  • 200g of 00 grade Pasta flour
  • Pinch of salt
  • Fresh basil
  • Feta cheese
  • VOM FASS Extra Virgin Olive Oil Le Special with lemon, basil and rosemary
  • VOM FASS Aceto Balsamico Di Modena

Preparation:

  • Mix all the ingredients in a bowl until you obtain the consistency of a dough
  • Keep adding flour if the dough is too wet
  • Leave to rest while you prepare your stuffing
  • *Tip: if you're using a Pasta machine, make sure your dough is dry enough or it will stick
  • If you're using a rolling pin, cut small portion of pasta dough. If your pasta dough is wet add some flour as you're rolling it
  • If you don't have pasta cutters, you may also use baking cutters

Stuffing:

  • In a Blitzer, add feta cheese and fresh basil and blitz until soft
  • Place some stuffing in the middle of your pasta rings
  • Wet the edges
  • Take another pasta ring to cover the first one with the stuffing; wet the edges and stick both part together
  • *Tip: you can also fold your rings
  • Boil them until cooked
  • Serve with a drizzle of VOM FASS Aceto Balsamico di Modena and VOM FASS Extra Virgin Olive Oil Le Special with lemon, basil and rosemary
